Plant Protein Rice Crispy Treats Recipe

Fun vegan treat recipe by Lien Vanneste (@vegan_mealprep_Sundays) in two flavours.

 

Vanilla Cinnamon Protein Rice Crispy Treats

 

Ingredients:

2 scoops BlueLab™ 100% Plant Protein Vanilla Cinnamon flavour

4 cups puffed rice⠀

4 tbsp coconut oil⠀

⅔ cup peanut butter, no sugar/salt added⠀

 

Method:⠀

1. Melt the coconut oil and peanut butter on the stove on low medium heat until melted. ⠀

2. Stir in the BlueLab™ 100% Plant Protein.  ⠀

3. Pour the mixture over the puffed rice and mix well. ⠀

4. Pour the coated puffed rice in a baking paper lined square or rectangular dish.

5. Allow to set in the fridge until hardened.

6. Once hardened, remove the treat by lifting the edges of the baking paper and cut the treat into squares.

 

 

Chocolate Mocha Protein Rice Crispy Treats

Ingredients:

2 scoops BlueLab™ 100% Plant Protein Chocolate Mocha flavour

4 cups puffed rice⠀

4 tbsp coconut oil⠀

200 g sugar-free dark chocolate⠀

 

Method:

1. Melt the coconut oil and dark chocolate on the stove on low medium heat until melted.

2. Stir in USN BlueLab™ 100% Plant Protein.

3. Pour the mixture over the puffed rice and mix well.

4. Pour the coated puffed rice in a baking paper lined square or rectangular dish.

5. Allow to set in the fridge until hardened.

6. Once hardened, remove the treat by lifting the edges of the baking paper and cut the treat into squares.
